Baked fillet of tuna with P.D.O.* Kalamata olive oil Minerva

P.D.O Kalamata Extra Virgin Olive Oil

1kg fillet of tuna
1 ½ cups P.D.O. Kalamata olive oil Minerva
2 medium onions finely chopped
1 small bunch parsley, finely chopped
1 ripe tomato diced
1 ripe tomato cut in slices
1 tsp oregano
Juice of 1 lemon
Salt, pepper
1 Combine finely chopped onions and parsley and rub tuna fillets with mixture
2 Place fish in pan
3 Place a slice of tomato over each fillet and spread diced tomato around tuna
4 Sprinkle each fillet with oregano, salt and pepper
5 Drizzle fillets with P.D.O. Kalamata olive oil and lemon juice
6 Bake in oven at 180oC for about 50-60 minutes or until fish is soft and flaky.
