Chicken with caramelized onions

Minerva Extra Virgin Olive Oil

2 fillet of chicken breasts, cut in pieces
3 medium onions cut in thin round slices
6 tbsp sugar
4 tbsp margarine with Greek extra virgin olive oil Minerva
Salt, pepper
1 Place 1 tablespoon margarine in frying pan over medium heat and when melted add onions
2 Sauté until onions are soft and add sugar
3 Continue to sauté stirring occasionally until onions are caramelized
4 Melt remaining margarine in another pan and add chicken pieces
5 Sauté for about 2-4 minutes on each side until browned and chicken is cooked
6 Add salt, pepper and caramelized onions
7 Stir well until ingredients are combined and remove pan from heat
8 Serve.
