Chicken fillet with Minerva feta cheese & mint filling

Minerva Feta Cheese (P.D.O.)

4 chicken breasts
some mint
400gr. feta cheese Minerva
salt, pepper
P.D.O Kalamata extra virgin olive oil
1 Open the 4 fillets in the middle
2 Salt and pepper and fill with Minerva feta (100gr in each) and some mint
3 Close the fillet placing a toothpick on both sides to keep the filling inside
4 Oil the fillet well and place on the grill or in the oven set at 200ο degrees Celsius
5 Grill on both sides until golden brown
6 Remove the toothpicks before serving
7 May be served with aromatic rice boiled in water with basil and cinnamon.
