Rocket, xinomyzithra and sundried tomatoes salad  with Balsamic Vinaigrette

4 bunches of rocket
150 gr. grated xinomyzithra cheese
2 tblsp pine nuts
6 finely chopped sundried tomatoes
¼ chopped radicchio

Ingredients for Balsamic Vinaigrette

75 ml TOP Balsamic Vinegar
1 tblsp sugar
1 tsp mustard
1 small garlic clove
1 shallot
80 ml Horio Classic olive oil
150 ml sunflower oil
Salt-pepper

 

1 Prepare Vinaigrette: Put all ingredients in a blender and slowly add olive oil in the end.
2 Add salt and pepper and pour vinaigrette in a bottle. Keep refrigerated.
3 Chop rocket in a bowl, add radicchio, pine seeds, sundried tomatoes and 80 ml Balsamic vinaigrette (add more vinaigrette for a more juicy salad).
4 Mix well, serve and add xinomyzithra cheese on top.
