Baked lamb with yogurt-feta crust
2kg leg of lamb
1 onion finely chopped
1 carrot coarsely grated
1 cup water
Salt, pepper
For the yogurt-Feta crust
450g cheese spread with feta
3 eggs
80g melted butter
1 Season leg of lamb with salt and pepper and place in greased baking pan (preferably clay baking dish)
2 Scatter onions and grated carrots on top, add water to pan and bake in preheated oven at 180oC for about 1 ½ -1 ¾ hours, until tender
3 Beat eggs and add feta spread mixing well until creamy
4 Stir in melted butter
5 Remove lamb from oven and pour feta spread mixture over lamb
6 Place back in oven and bake for another 20-25 minutes until a golden brown crust is formed on top
7 Serve with baked potatoes or rice.
