Stuffed baked potatoes with gourmet white cheese with Mediterranean herbs, red peppers, oregano and thyme

Minerva Gourmet White Cheese

2 potatoes
80g gourmet white cheese Minerva
30g finely chopped bacon
2 leaves fresh basil, finely chopped
25g butter
1 Wash potatoes well and wrap with aluminum foil
2 Bake in oven at 220°C for about an hour
3 Remove from oven when baked and cut in half lengthwise
4 Place in baking pan
5 Remove most of the flesh from the potato leaving a well in the center
6 Mix the gourmet cheese with the butter and the chopped bacon
7 Combine with potato flesh and fill the center of each half potato with mixture
8 Bake in oven at 160°C for another 10 minutes
9 When ready, remove from oven and sprinkle with fresh chopped basil.
