Octopus with macaroni

Ingredients
- 1 kilo octopus
- 500gr. macaroni
- 2 onions (finely cut)
- 4- 5 fresh tomatoes (finely cut)
- 1/2 bunch parsley (finely cut)
- 3/4 teacup of Minerva margarine with Greek olive oil
- 1 teacup of white wine
- 1- 2 bay leaves
- salt
- pepper
Step by step directions
Step 1
Boil the octopus in water (enough to cover it) with 1 cup of vinegar until tender.
Step 2
Strain.
Step 3
Remove all black membranes from the octopus and cut into pieces.
Step 4
Warm the Minerva margarine with Greek olive oil in a saucepan and saute the onions.
Step 5
Add the octopus and mix for 3’- 4’.
Step 6
After roasting with wine, add the tomatoes and some water.
Step 7
Add some salt and pepper, the parsley and bay leaves and leave.
