Balsamic Vinaigrette

Ingredients

  • 4 bunches of rocket
  • 150 gr. grated feta cheese
  • 2 tblsp pine nuts
  • 6 finely chopped sundried tomatoes
  • ¼ chopped radicchio

Ingredients for Balsamic Vinaigrette

  • 75 ml TOP Balsamic Vinegar
  • 1 tblsp sugar
  • 1 tsp mustard
  • 1 small garlic clove
  • 1 shallot
  • 80 ml Horio Classic olive oil
  • 150 ml sunflower oil
  • Salt
  • pepper

Step by step directions

Step 1

Lightly fry the fillet

Step 2

Cook for 2-3 minutes in 180°C oven.

Step 3

In a frying pan lightly fry the onion, the small tomatoes, the spinach and the rocket with P.D.O Kalamata extra virgin olive oil.

Step 4

Add seasoning and set up the dish in a round pan.

Step 5

First put the fillets and on top add the lightly fried vegetables.
